Job Description:

Saugeen Golf Club - Sunset Grill - Line Cook Position

Various shifts (Morning, Afternoon and Evening, including Weekends) Reporting toSous Chef and Head Chef

Duties and Responsibilities 

Practices sanitation standards at all times.

Prepares food consistently following recipe cards.

Uses production charts/prep lists to ensure stations are stocked before service.

Cook or prepare orders per bill, banquet event order contract, or prep list depending on shift. 

Accommodates any special requests from guests or members.

Informs Supervisor of any shortages or issues.

Start any prep that can be created ahead of time, making sure not to over-estimate needs by following par lists.

Ensures all perishables are kept at the proper temperatures.

Ensures all food is rotated and properly labeled and dated.

Portions all items on assigned station properly.

Controls food waste, loss and usage per standard operating procedures.

Assists in prep work of vegetables and condiments as required for the next shift.

Returns all food items not used on next shift to designated storage areas, being sure to refrigerate all perishables. Stores all food according to FIFO & HAACP with proper dates and labelling.

Notifies Head Chef or Sous Chef if leaving station for any reason.

Take breaks at appropriate times per kitchen management.

Ensures all Refrigeration Logs, HAACP, and Waste reports are completed on a daily basis.

Report all equipment repair needs to Supervisors.

Complies with all company policies and procedures including consistent cleaning tasks or other duties as required.

Minimum Requirements / Work Experience:

One-year kitchen experience in equivalent position. Ability to perform banquet, wedding, and prep cook responsibilities. Capability to read, write and speak English to take independent direction. Ability to stand for complete shifts and to lift up to 50lbs. Basic mathematics skills for proper portioning and efficiency. Successful completion of food handlers and WHMIS program within probationary period. Ability to work in a team environment and under time sensitive pressures. Flexibility preferred to work varying schedule of mornings, afternoon
